On Tuesday night, I tried a new recipe along these lines. My goal was to stretch about an ounce of London broil into dinner for both of us, with enough leftovers for two lunches. The results, pictured below, were delicious!
I first sautéed my London broil with some garlic, olive oil, basil, and a diced tomato. Then I cut the meat into bite-sized pieces, and served it with the tomatoes over a modified version of Hillbilly Housewife’s Cream Cheese Basil Pasta (I doubled the amount of Parmesan cheese and spices, and also substituted elbow macaroni for the spaghetti).
Donnie and I were both pleased with this creamy, flavorful dish. The pasta—which would be delicious served on its own—was the perfect base to stretch a tiny portion of London broil into a fantastic dinner.

wow a ounce of meat for the both of you that is frugal, we eat lots of meatless meals to save at our house.
I love being frugal...and I especially love getting more than one meal out of cooked meat such as a pork loin or a whole roasted chicken. One of my favorite ways to do this is to make a pork loin and to serve it with mashed potatoes, salad and a vegetable the first night. Then the second night I like to turn it into fajitas by slicing up the leftover pork and adding it to cooked bell pepper, onion and taco seasoning. It's like a whole different meal..many times I'm the only one that knows it's leftovers!
I mix it in with white dried beans and crock pot it. The flavor is absorbed by the beans :)
I do alot of what Michelle does: repurpose leftover meat into a whole new dish. For example, we'll have baked chicken on night. Then, I'll debone the leftovers and use them in chicken noodle soup, chicken pot pie, or mexican lasagna. No one knows the difference.
