
In an effort to be healthier, Donnie and I are committing to eating more vegetarian and vegan dishes. One nice side effect is that we'll also be eating more frugally.
Here are some of my favorite meatless meals. What are yours?
Grilled cheese and tomato sandwiches.
Black bean quesadillas.
Veggie fried rice.
Pasta primavera.
Meatless lasagna.
Linguine with pesto and parmesan.
Macaroni and cheese (I add peas).
Pasta with cream cheese basil sauce.
Vegetable risotto.
Bean and cheese burritos.
Eggplant parmesan.
Veggie-lovers pizza or stromboli.
Scrambled eggs, toast, and fruit.
Vegetarian chili.

I'm happy that Lent is almost here. That gives me an excuse to make some meatless meals and hubby doesn't grumble about it too much. I'm hoping it will help us save some money more so than as an excuse to eat healthy. Thanks for some great ideas!
Hi--actually we have been doing mostly vegan since October for health reasons. It helped my cholesterol drop 50 points. However our food bill has gone up since we buy a lot of fresh veggies and because I have to buy gluten free noodles which are expensive. I could go the cheaper route of having rice---but I love pasta. My favorite recipes are on my recipe blog at: http://nannykimsrecipes.blogspot.com/

Split pea soup with carrots.

I just started incorporating one meatless meal into the menu this month in an effort to cut back on groceries. I haven't noticed a difference yet, but I know that in time it will make a nice little dent.
